Callaloo Fritters

- Callaloo Fritters
- 2 cups raw callaloo cut up
- ½ onion
- 1 tomato
- 1 tbsp. margarine
BATTER:
- 1 cup all purpose flour
- ¼ tsp. salt (optional)
- 1 tsp. baking powder
- 1 egg
- vegetable oil for deep-frying

METHOD:
- Heat margarine; sauté onion and tomato.
- Add callaloo and steam for about 5-10 minutes.
- Cool and set aside.
- Sift flour, measure, and sift again with baking powder and salt.
- Beat egg and add to cooked callaloo.
- Combine egg and calaloo with flour mixture.
- Heat frying pan and add oil to a depth of ½ inch.
- Drop by tablespoon in hot oil and fry.
- Serve hot.

WHAT IS CALLALOO?????????????????????????
Callaloo is a large leafed dark green vegetable which often grows wild in the Caribbean, particularly on river banks. Never, never eat it raw as it stings the mouth and throat (I know). Treat it like spinach, but cook it longer, say a minimum of 25 to 30 minutes. It has a rich and delicious taste
It is a leafy green grown in Caribbean countries.Similiar to spinach, kale, swiss chard...Can be found canned in International food stores but nothing beats fresh!
