Sweet Potato Pudding

Sweet Potato Pudding is a favorite Sunday desert of Jamaicans and is fondly know as ""hell a top, hell a bottom and hallelujah in the middle'.

INGREDIENTS:

  • 2 pounds sweet potato
  • 1 cup flour
  • 2 cups coconut milk
  • 1 1/2 cups dried fruits
  • 2 teaspoons vanilla
  • 1 1/2 teaspoon grated nutmeg
  • 1 teaspoon mixed spice
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon margarine

METHOD:

  1. Wash and pare off the skin of the potatoes
  2. Wash again then grate
  3. Grate coconut, add water and squeeze juice through a strainer
  4. Blend flour, mixed spice (raisins etc) ,salt, and nutmeg.
  5. Combine this mixture with the grated potatoes and mix well
  6. Add sugar, fruits and coconut milk. Mix well.
  7. Grease pan, pour in batter, bake at 350 degrees F for 40-60 minutes or until done

I MUST TELL YOU THAT ONLY THE JAMACIAN SWEET POTATO PUDDING IS THE BEST!. YOU SHOULD MENTION WHAT KIND OF POTATO YOU USE FOR YOUR PUDDING, THOUGH.

I AM A COOK. AND I CAN TELL WHEN A DISH IS EXCELLENT.

HOWEVER, WHY DON'T YOU MAKE THE JAM. POTATO PUDDING "CREAMY" ON THE TOP.?.. HAVE YOU EVER EATEN ONE, OR TRY IT ? GREAT!!

Make sure to use Bonita Potatoes also add some White Rum and Brandy to the coconut mixtuer the coconut mixture, leave a little behind, melt some butter add brown sugar and the coconut mixture and pour on top before putting it in the oven. If possible use a convection oven for best results, it replicates the "hell a top hell a bottom" method.

Happy new year to you. for the time i have baked sweet potato pudding especially for Christmas, it was marvellous my children and I enjoyed it. I have baked the Christmas cake also. I can now depend on your site to try my skill using as much ingredients as possible.

What P. Howell calls 'creamy' top is popularly known by Jamaicans as Fluff top. Some people even call it 'mud top'. But whether you call it 'creamy top', or fluff top or mud top, there is nothing quite like it. It is FINGERLICKING good

My sister Marvalyn Wilson makes the best sweet potato pudding.. She makes it for me whenever I visit Jamaica....However i'm willing to shock and awe my family by attempting to utilize your recipe...my attempt at a Jamaican pudding is shocking in itself as I am known as a "fake Jamaican"..lol....Thanks for the recipe!!!...Here I go!!!

If you're like me, who get heartburn when I eat potato pudding, add a little grated ginger and a pinch of black pepper to your mixture. The ginger gives a nice flavor, you don't taste the b/p and best of all, no more heartburn!

To make the jelly topping for this pudding recipe. I mixed a half cup of coconut milk, a tablespoon of butter, two teaspoons of coconut flavored rum, a tablespoon of flour and sugar and salt to taste. When the top of the pudding solidified (after about 30 minutes), I poured the mixture on top of the pudding and let it bake another half an hour. Tastee!

I bake pritty well, but the potato pudding is always a challenge. I tried other recipes but the pudding just does not hold together. Into the oven we go. Will let you know.
