Sweet Potato Pudding

Sweet Potato Pudding is a favorite Sunday desert of Jamaicans and is fondly know as ""hell a top, hell a bottom and hallelujah in the middle'.

INGREDIENTS:

  • 2 pounds sweet potato
  • 1 cup flour
  • 2 cups coconut milk
  • 1 1/2 cups dried fruits
  • 2 teaspoons vanilla
  • 1 1/2 teaspoon grated nutmeg
  • 1 teaspoon mixed spice
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon margarine

METHOD:

  1. Wash and pare off the skin of the potatoes
  2. Wash again then grate
  3. Grate coconut, add water and squeeze juice through a strainer
  4. Blend flour, mixed spice (raisins etc) ,salt, and nutmeg.
  5. Combine this mixture with the grated potatoes and mix well
  6. Add sugar, fruits and coconut milk. Mix well.
  7. Grease pan, pour in batter, bake at 350 degrees F for 40-60 minutes or until done

Tried this recipe. I added almond extract as well and it was awesome!!!! Loved it :-) Thanks for sharing

I MUST TELL YOU THAT ONLY THE JAMACIAN SWEET POTATO PUDDING IS THE BEST!. YOU SHOULD MENTION WHAT KIND OF POTATO YOU USE FOR YOUR PUDDING, THOUGH.

I AM A COOK. AND I CAN TELL WHEN A DISH IS EXCELLENT.

HOWEVER, WHY DON'T YOU MAKE THE JAM. POTATO PUDDING "CREAMY" ON THE TOP.?.. HAVE YOU EVER EATEN ONE, OR TRY IT ? GREAT!!

@Tami. How do you incorporate the almond extract in this recipe?

Make sure to use Bonita Potatoes also add some White Rum and Brandy to the coconut mixtuer the coconut mixture, leave a little behind, melt some butter add brown sugar and the coconut mixture and pour on top before putting it in the oven. If possible use a convection oven for best results, it replicates the "hell a top hell a bottom" method.

Happy new year to you. for the time i have baked sweet potato pudding especially for Christmas, it was marvellous my children and I enjoyed it. I have baked the Christmas cake also. I can now depend on your site to try my skill using as much ingredients as possible.

To make the jelly topping for this pudding recipe. I mixed a half cup of coconut milk, a tablespoon of butter, two teaspoons of coconut flavored rum, a tablespoon of flour and sugar and salt to taste. When the top of the pudding solidified (after about 30 minutes), I poured the mixture on top of the pudding and let it bake another half an hour. Tastee!

i am going to make this forr my ex-husband's christmas he loves sweet potato pudding, i have never done this before so i definately will be back after i make it and let you know how it went.

My pudding stayed soggy it never turned into the pudding why is this?
