Citrus Curry Rice Salad

This month's recipe of the month is just for your vegetarians Citrus Curry Rice Salad. Baked Sweet & Sour Chicken.

METHOD:

  1. Drain oranges, reserving juice.
  2. Mix juice, water, raisins and spices in a saucepan. Bring to a boil. Stir in rice.
  3. Return to boil.
  4. Reduce heat to low and cover and simmer for 5 minutes.
  5. Remove from heat. Let stand for 5 minutes.
  6. Spread in shallow pan. Freeze for 10 minutes (to quickly cool rice).
  7. Toss with remaining ingredients. Serves 6-8.
