    Tried something new

    Eggplant was on sale at my market this week, 2 for $1.

    I put a bit of oil in a pan and cooked slices (after peeling off the skin) for about 4 minutes each side, then took them off the fire.

    Crushed 4 cloves of garlic and chopped 4-5 slices of jalapeño and mashed it all together...it's REALLY good!

    ohliz I've done that also plaintains, mango chucknie(sp) is also good with eggplant.

    Ohliz, you may like this recipe:

    Eggplant and Tomato Spread

    1 large eggplant ( 1 - 1 1/4 pound)

    3 green onions, chopped

    1 large clove garlic, chopped

    1 large tomato, peeled and chopped

    1 small stock celery, finely chopped

    1/4 cup green pepper, chopped

    1 tlbsp lemon juice

    2 tsp olive oil

    1/4 tsp salt and pepper


    Prick eggplant in several places with fork - bake on baking sheet at 400 in the oven for 45 minutes, turning once or twice.

    Let cool, drain and then scoop out flesh and chop finely.

    In a bowl, combine eggplant, onions, garlic, tomato, celery and green pepper

    Add lemon juice, oil, salt and pepper and mix well.

    Cover and refrigerate for at least 1 hour before serving.

    Sorry ohliz, I was not clear, I've done just plantains with the garlic. Also, you can deep fry the egg plant and have it with mango chucky.

    Ever make homemade pizza? eggplant is perfect for that. Or saute it with a little olive oil and garlic. It gets soft like squash.
